So one of my goals for the year is to cook more and eat healthier. Well, let’s see….I’ve been snacking on leftovers from Adriano’s birthday party including chips, muddy buddies, cupcakes and cookies…not good! I also made a crockpot roast that was so-so. My husband told me to stick to spaghetti. Apparently I can boil noodles, brown meat and open a can of sauce. Go me.
This morning I made a black bean and spinach omelet and it was yum! I’m actually pretty good at making breakfast….not much you can ruin with eggs and toast! Here’s the recipe in case anyone is interested! (and yes I do need to follow a recipe to make an omelet, I just don’t have that cooking instinct)
Black Bean and Spinach Omelet
1 tbsp margarine
2 handfuls baby spinach
1/2 small tomato chopped
1/2 cup black beans
1/4 cup cheddar/jack shredded cheese
salt & peppa
Heat margarine and add spinach, some salt and pepper until the spinach is wilted and drain.
Pour eggs into pan, sprinkle with more salt and pepper and add spinach, beans, tomato and cheese.
Let cook open-faced until bottom turns golden brown. Then fold in half.
Add some salsa and sour cream…
(he had his with extra cheese!)
